Parsnips are wonderful!

If you buy them now, they'll keep a couple months in the fridge.

If you want to keep them longer, wash them, peel if you like, and cut them into bite sized pieces. Put them in a gallon size zipper bag. Put that zipper bag in another zipper bag. Label with the contents and with today's date, and freeze. For faster cooking on the other side, you can also blanch them briefly in boiling water, then shock them in ice water and drain well before freezing.

Enjoy your veggies!

Absolutely they can be frozen. Plastic, Foil, and Plastic again.
