Hi, there are cake mixes in the box that are vegan. Duncan Heinz chocolate is one. Some of the cheaper brands have animal fat in them, so read their labels. If you are making a vegan cake from scratch, you should know that not all sugars are vegan, but most of them are. There are still some companies out there who use bone char to bleach their flour and sugar. When I am baking, I use unbleached flour and there are some organic sugars that say 'suitable for vegans' that I only use. There are vegan spreadable butters, but they are usually the "lite" or "light" versions of the brand.
Remember that for every egg a recipe calls for, the equal substitute is 1/4 cup mashed banana per egg.

Milk, Eggs, Meat, Fish, Poultry, Honey, most refined sugar, and any animal by-products (there's a lot, but you can look up a list. Happy Cow has one).
You CAN use egg replacer (which you can find at most health food stores), soy, almond, rice, or coconut milk, and brown sugar, agave nectar, or maple syrup, etc.
I don't use baking powder, either, because it has cream of tartar, which comes from wine, which isn't always vegan. You can replace it with baking soda and molasses.
Also, if all else fails, you can always buy an AMY's Kitchen brand organic vegan cake at the store. =)
Vegan
As I understand it, anything that isn't meat, dairy or eggs. Also anything produced with animal products like sugar & some wines. I would use Margarine instead of butter, that is if there isn't anything in its production associated with animals. It depends, if they're vegetarian but not vegan, they will eat eggs & some will have dairy.
