Yes it is if you know that the quality is outstanding and the source is reliable. In the US, it is acceptable to eat pork in the "pink" though not as rare as beef or game meats or even duck. Pale pink or a pale rosy hue is common especially with higher end restaurants. If you are eating in a restaurant and uncomfortable with it, send it back and they will gladly accommodate you.
