How can I get more variety in my diet!?!?!


Question: How can I get more variety in my diet!?!?
For the past 4 months or so, I have eaten literally almost nothing besides pb&j's, oranges, bananas, vegan "bbq riblets", boca burgers, plain bread, peanut butter, pears, and iceberg lettuce!!!!!!!!!

I am feeling sick and I know I'm not getting proper nutrition!! Tips?
Also any good vegan blogs for SIMPLE vegan meals? OR just recipes?

Good thing you came to us because you definitely are not getting proper nutrition, at all.

First off, you need iron in your diet. Legumes (lentils especially), fortified breakfast cereal (product 19 is a good one), spinach (eat it with a source of vitamin c to help absorb iron), collard greens, and tofu are all good sources. Always take a multivitamin, which helps.

You will need omega fatty acids for heart health too. You can get this in walnuts, and flax-seed (supplement, ground seeds, oil). I always just take a supplement just to be sure.

You need b12 as well, which is for energy. Take a supplement for this.

Alright, well now...you need more vegetables period. Make a tofu veggie stir fry, vegetable and bean soup, spaghetti with a side salad (of ROMAINE lettuce, which is much healthier than iceberg) and you can even do what I like to do, which is add roasted/steamed veggies to my tomato sauce. I usually like to add zucchini, carrots, and sometimes pineapple. Sounds weird, but it's really good.

You just have to be creative when it comes to being vegan, it's very important to maintain a healthy diet. Try not to depend on boca burgers and all that processed food for nutrition, which is all just high in sodium. I assume you are eating it because of the protein, but there are much better sources. Quinoa, whole grains, edamames (soybeans), tofu, legumes and you could even make your own veggie burgers and then freeze them for a quick meal one day. All those are high in protein.

Ok, you should eat a wide variety of fruits, veggies and nuts. The nuts are very important because they have protein. I recommend walnuts. You can also try getting pills for vitamins you know your're missing out on. I've been a vegetarian my whole life and I do fine. If there is a whole foods market near you (I know expensive) go there and ask the employees which foods they think are good for your diet.

Vegetables: mushrooms, beetroot, tomatoes, capsicum, sweet potato, corn, broccoli, peas, green beans, parsley, spinach

Fruits: red grapefruit, kiwifruit, mango, pineapple, watermelon, cherries, blueberries, strawberries, raspberries (you can get these frozen), passionfruit, papaya, cantaloupe, nectarines, apricots, plums, peach, grapes, avocadoes

Nuts and seeds: almonds, walnuts, brazil nuts, cashews, hazelnuts, pecans, pumpkin seeds, sunflower seeds

Grains: buckwheat, brown rice, quinoa, oats

Try and include as many different things as you can daily.
