I absolutely love this cookbook. It's vegan, not vegetarian, but still amazing. The author also has a similar cookbook, but for vegetarians instead of vegan. I'm not so in love with that one, but it's got some good stuff. Here's the Link: http://www.amazon.com/Students-Vegetaria…

Here's another really good vegetarian cookbook, and it has pictures with almost every recipe (the other two have no pictures.) http://www.amazon.com/Womans-Day-Wednesd…

If you just go to Amazon and type in "vegetarian cookbooks," "easy vegetarian cookbooks," or "student vegetarian cookbooks" you should be able to find a plethora of options. Check your local library before buying any though.

I have had a few and personally my favourite is:

I like it because there are pictures of every completed recipe, and none of the recipes are too complicated with tonnes of ingredients. This book is also available from amazon.com. My flatmate also has the nosh for students recipe book, which is not specifically vegetarian, but does have loads of veggie recipes in it.

There is an excellent veg eatery in Los Angeles called "The Spot". They have an excellent cookbook. http://www.worldfamousspot.com/

There are some great ones on Amazon.com if you just search for vegetarian student.
There are also some great recipes here: http://healthycollegevegetarian.blogspot…

Go on a book website and look at the reviews. I know there's some really good veg. cookbooks at borders.
