Question: Ok then. what do i do with SILKEN tofu?
i get silken tofu on wic...i got excited and found a good recipe but just found out i need FIRM tofu..and i have silken..i guess its an egg sub.
anyway can anyone give me some easy recipes to use this with? i found a recipe for brownies but id like something i could make for lunch for my kids.

Silken tofu is a bit variable - some is firmer than others. There are many recipes where you whizz tofu with other ingredients to make sauces and salad dressings, but if it's the slightly firmer kind (it's still nothing like 'firm' tofu) you can do everything with it and I think it's much nicer than most of the tofu sold as 'firm'.

To make it a bit firmer, if you feel it needs it, remove it from the packaging carefully, draining any liquid, and slice it 1/3 or 1/2 inch thick. Line a plate with paper kitchen towel (absorbent paper), put the tofu slices on it, cover with more paper kitchen towel, then an identical plate, and put a weight on top (you can use tins, bags of sugar, anything). Leave it for an hour or more. What I then like to do is to dip the slices in cornflour (and sometimes I add seasonings to it eg paprika, ground cumin, chili, whatever you fancy) and fry it. Delicious!



You could make burritos. Silken tofu won't work as well as firm, but it won't be bad.

1. Press a the tofu while you wash and cut your vegetables (potatoes, bell peppers of any colour, carrots, and mushrooms.)
2. Lightly oil a large skillet with olive or vegetable oil and add a little garlic, crushed black pepper, and cumin. Add potato cubes and carrot sticks, and stir constantly until heated through.
3. Next, add the mushroom slices and diced pepper. Season with basil and a little more garlic. Continue stirring until heated through.
4. Crumble the pressed tofu on top, adding more cumin and black pepper, as well as a little chili powder. Stir while adding a dash of soy, and sprinkle in turmeric until desired colour is achieved. Continue heating and stirring until the tofu has mixed well with the vegetables and heated through.
5. Wrap in a tortilla with salsa, guacamole, cheese, sour cream, or whatever toppings you like.



You can use it in a salad dressing. It's also very good in smoothies. Here's a recipe for a blueberry smoothie with silken tofu
