vegetarian xmas dinner help?!


Question: Vegetarian xmas dinner help?
my friend doesnt eat meat full stop ( thinks its cruel or whatever ), hes coming ours for christmas dinner and me and the wife dunno what to do as we cook our potatoes and use meat stock for gravy etc? Any ideas on how to get him a dinner he'll enjoy without making him feel like an outsider at our carniverous meatfeast ;)

you can get a tofurkey, they sell them at trader joes lol



You should cook plenty of veggie side dishes, such as mashed potatoes, corn, carrots, and plenty of other delicious veggies. :D As for gravy, you should make a simple vegetarian gravy. I recommend this recipe:Ingredients
1/2 cup vegetable oil
1/3 cup chopped onion
5 cloves garlic, minced
1/2 cup all-purpose flour
4 teaspoons nutritional yeast
4 tablespoons light soy sauce
2 cups vegetable broth
1/2 teaspoon dried sage
1/2 teaspoon salt
1/4 teaspoon ground black pepper
Directions
1.Heat oil in a medium saucepan over medium heat. Saute onion and garlic until soft and translucent, about 5 minutes. Stir in flour, nutritional yeast, and soy sauce to form a smooth paste. Gradually whisk in the broth. Season with sage, salt, and pepper. Bring to a boil. Reduce heat, and simmer, stirring constantly, for 8 to 10 minutes, or until thickened.
For a main dish, I also recmmend veggie soup OR is really want a challenge, make a veggie loaf. I hope it's not too much trouble. I myself am vegetarian so I know how your freind feels, haha.

The only thing you need to do different is to buy a Quorn roast, which is like a little turkey that you can carve slices from, so that will do as a replacement for the meat. And as for the rest, can you not just cook everything in vegetable oil or using vegetable stock? I know it's not exactly the same, but for the sake of saving yourself loads of hassle by cooking two versions of everything it's not a big deal. And although it's his choice to be veggie, you shouldn't have him over if all you're going to give him are a few carrots, so be fair to him! Do all the veggies so everyone can have them, and then maybe ask him to bring anything else he wants with him? Say you're uncertain about veggie fod so don't want to get it wrong, and he can bring the Quorn stuff and maybe a little dessert if you're planning on having anything with gelatin in? Guests should bring a little something anyway, I would.



He may appreciate being asked. I'm a veggie, so I'd advise not going for a nut loaf/nut roast - It's so predictable. Also, under NO CIRCUMSTANCE should you dish up pasta for Christmas - It'll make him feel left out of traditional xmas food and veggies get so sick of it - It's such a cop-out and veggies have to suffer it all the time :(

Why not give him a call and say you are at a bit of a loss to know what he would really enjoy for his Christmas dinner? One thing I occasionally do when invited out to dinner is make my own main thing and let my hosts do the vegetables etc. If you can only do gravy with meat stock, just let your friend know that it, and anything else on the table contains meat or meat products.
We vegetarians are quite used to finding our way around meat-eaters tables and aren't usually offended at all to be doing so. It's all about fitting in with everyone.



the main 3 things you will have to do differently from your own are
meaty part, personally i would go to veg chilled section in marks and spencer. they have a bread crumb veggies option looks a bit like chicken kiev but it isn't.
cook the roasties in so veg oil for them, even if you are doing yours in goose fat.
gravy, i am sure they would be fine with some instant bisto veggie option.
just remembered , trifle don't forget they won't eat the ordinary jelly its got gelatin in it.



One beetroot, one sugar cane, one apple, one jicama in stripes, mixed and when it serve, you put peanuts over


One can of cocunut milk on a bowl of rice, cook it as usual and serve with mango slice


Boil a half lettuce and some pottatos, add salt, when pottatos get ready, blend them including the lettuces, serve with lots of pepper

look up "delia Smith online"-she has brilliant veggie recipes specially for Christmas.Her point is to make the vegetarian feel like they have had a proper lunch with all the trimmings,not just a boring old nut roast.you may enjoy some of it yourself!

Totally agree about your pasta comment 'Mrs Jones'. I'm fed up with places that offer pasta as a veggie option to roast dinners - why can't vegetarians enjoy the veg with the meal? These days there are so many other ideas around. Get a Cook Vegetarian magazine for loads of suggestions.

I think the worst thing for hosts to do is to ask a vegetarian to dinner and then expect them to eat all the sides.



Don't use the meat stock for the gravy or potatoes, cook them in oil instead.
As for the main dish - make a nut roast instead of turkey and the rest of the food should be fine.



Potatos (mashed or otherwise), corn-brussel sprouts-green beans, roast sliced eggplant top with grilled onions and seasoned breadcrumbs (I like to use shake and bake :)
Hummus, veggie tray, salad, grilled veggie kabobs



get him a nut roast. You can get one that serves 2. You can buy a vegetable stock for gravy as well.

Baked Sweet Potatoes

Ingredients:

* 4 sweet potatoes
* 4 pats real butter
* Salt and pepper

Almond and Broccoli Stir Fry

Ingredients:

* 1 teaspoon coriander seeds, cracked
* 1 tablespoon virgin olive oil
* 3 tablespoons almonds, slivered
* 1 green onion, chopped
* 1 garlic clove, minced
* 1 teaspoon ginger, minced
* 1 pound broccoli florets
* 2 tablespoons red wine vinegar
* 1 tablespoon soy sauce
* 1 teaspoon sesame oil
* 2 teaspoons sesame seeds

Directions:

1. Steam the broccoli florets until they are 3/4 way done. Place the almonds in a dry small non-stick skillet and toast them lightly.
2. In a non-stick skillet add in one tablespoon of virgin olive oil. Add in the broccoli, ginger, garlic, coriander seeds and green onions.
3. Stir fry the veggies for two minutes until the onions are translucent and the broccoli is finished cooking. Remove from the stove and add in the almonds.
4. In a small mixing bowl place the red vine vinegar, soy sauce and sesame oil. Mix well.
5. Place this vegetarian diet recipe for Christmas on a decorated serving plate. Lightly sprinkle some of the dressing and then top with the sesame seeds.

Note: You can add a few tablespoons of vegetable stock or water if needed when stir frying the broccoli.

Lite Vegetable Soup

Ingredients:

* 3 cups vegetable stock
* 1 small potato
* 1/2 cup peas
* 1/2 cup carrots, diced
* 1 green onion, chopped
* 1/4 cup vermicelli
* Salt and pepper

Directions:

1. Place the vegetable stock, potato, peas, carrots and onion in a stock pot. Bring to boil and cook until almost done.
2. Add in the vermicelli noodles and cook an additional ten minutes, stirring occasionally. Add salt and pepper.
3. Serve this wonderful diet recipe as a first course for your Christmas dinner. Diet vegetarian meals do not have to be boring and this recipe will excite your taste buds.

Tomato and Cucumber Yogurt Salad

Ingredients:

* 1 large cucumber, diced
* 2 tomatoes, diced
* 1 cup yogurt
* 1 green onion chopped
* Salt and pepper
* 1/2 teaspoon dried mint

Directions:

1. Place all the ingredients in a bowl. Mix well.
2. Serve this diet vegetarian dish on Christmas with bread sticks. This lovely salad will bring joy to any family looking for a light side dish during the holiday.

Roasted Brussels Sprouts

Ingredients:

* 1 pound Brussels sprouts
* 2 tablespoons virgin olive oil
* 1 teaspoon salt
* 1/2 teaspoon pepper

1. Cut off the ends of the Brussels sprouts and remove some of the outside leaves.
2. Place the Brussels sprouts in a large bowl with the oil, salt and pepper. Mix everything and make sure all the sprouts are coated.
3. Place the Brussels sprouts on a baking sheet and bake in a very hot 400 degree oven. Bake this very simple vegetarian diet Christmas dish for 30 to 35 minutes and serve immediately.
