It means to concentrate on what you are eating (taste, texture, smell, how satisfying it is) instead of just shoveling food in.
What "eating, mindfully" means to me is eating slow and focusing on your food. Chewing and savoring. But I also think it means to eat with purpose. Eating because I'm bored isn't a very good purpose. You eat to live, to be energized, and to be nourished. Making wise choices about what goes into your mouth and what you absolutely need are part of mindful eating. The portion sizes of food in America today are far greater than we need or should consume. One of my favorite quotes is, "Glutton: one who digs his grave with his teeth".
Vegan
Instead of eating like a pig and eating junk food, make healthy choices and eat good food. For example, instead of a pizza or don-nut breakfast, replace that with bananas or apples. Instead of coke for a drink, water and orange juice are good. But be careful of orange juice, it has sugar. You should also watch you carbs. If your playing for a team, eat foods with alot of carbs and get your energy pumpin! :)

In my mind, it means being conscious and aware of how your food made it to your plate, and making choices that lessen your own personal impact on the earth with those choices... for example, knowing how and where your produce was grown (how far did those strawberries travel for you to eat them out-of-season, anyway?), focusing as much as possible on locally-grown and in-season foods, and (if you eat meat) knowing how and where it was raised and slaughtered.
Pay attention to your labels and to your stomach, if you think you might be full Just stop eating! and save the rest for later.
