-Stuffed Portabello Mushrooms (Baked)

-Tofu Dishes: Steamed with Fresh Shiitake Mushrooms, Cubed in Vegetable Based Broths & Soups, Firm Tofu (Marinated & Grilled), Silken Tofu Custards,
Tofu Salad (Cubes of firm tofu tossed with toasted sesame oil, tamari/lite soy sauce, chopped green onions & chilantro (optional: spicy chili oil)

-Roast Vegetable Orzo (Pasta) Casserole

-Baked Polenta with Marinara Sauce & Asiago Cheese

-Vegetarian Lasagne (Using Lasagne noodles or Thinly sliced Zucchini Squash in place of Lasagne noodles)

-Southwest Black Bean Salad

-Vegetarian Baked Beans

-Baked Potato Buffet: Sour cream, chives, cheese, green onions, vegetarian chili

-Vegetarian Omlets, Scrambles or Stratas

-Stuffed Bellpeppers: With Wild Rice / Rice / Couscous / Salads (Like Chickpea/Blackbean/Lentils salad)
