Anything you eat over the number of calories you burn a day will make you fat. If you burn 2000 calories a day to exist and you eat 2500 in lettuce leaves every day you'll get a pound of weight added to your body when your eat an excess of 3500 calories of lettuce leaves. In this case 5 days.
Are they healthy? It's relative. They are healthier than having a Hershey bar but not has healthy as having a cup off your favorite fruit.
Anything not eaten in moderation will make you fat.
As for the protein/granola bars--I have found that they are just candy bars in disguise. There is always a lot of sugar and carbs in them, even the ones labeled "protein" bars.
