What are substitutes for milk and eggs?!


Question: What are substitutes for milk and eggs?
I've been a Lacto-ovo- vegetarian for almost a year. I decided to become one because of the sights of the animal meat being chopped and displayed in stores--and I didn't want to eat anything that once had a face. I've seen the Meat Your Meat video and was horrified. I want to become vegan at my one year anniversary to vegetarianism, but am afraid.

What are substitutes to eggs, milk, and other products of the such? I do quite like eggs rather much, but think I could drop them if I were to become vegan.

Milk replacements: Soy, rice, hemp, oat, almond, hazelnut, cashew, coconut...

Egg replacement: tofu for scramble and silken tofu, flax seeds, applesauce and bananas when it comes to baking.



You can actually replace eggs in baking with applesauce. Add molasses for a buttery flavor.

You could make a tofu scramble to replace eggs for breakfast. If you add some nutritional yeast (fortified with B-vitamins) when it's finished cooking, it'll give it a cheesy flavor. You can add potatoes, mushrooms, bell peppers, onions, spinach, or anything else you can think of to the tofu scramble. And the best part - no cholesterol.



I don't drink milk for other reasons, but the only good subsitute I have found is almond milk. I'll admit that I once loved to drink milk, and I still would if it didn't make me sick. I have found that rice, soy and hemp substitutes are kind of watery and have a ... dusty taste to them. Unless you are allergic to nuts I'd vote for almond milk.

As for eggs, I'm not sure. I still eat them. I know you can substitute silken tofu in pies or mousses instead of using milk and eggs. There are some good recipes online.



Milk - Soy milk, rice milk, almond milk, various other nut milks.
Eggs - Egg replacer such as Orgran's 'No Egg' is great for use in cooking and baking where egg would originally be used to bind ingredients or assist in rising and then such.
