I am a new Vegetarian and need help? ?!

Question: I am a new Vegetarian and need help? ?
So I have been one for two months, but all my mom knows to make me is a bunch of carb stuff like pasta. I have gained some weig because of a poor diet. If anyone has some really healthy meals that can be somewhat cheap, I would appreciate it.

Beans are very nutritious and very easy if you buy canned beans. You just have to heat and eat.
One simple idea is to take some canned beans, almost any bean will do, mix them with some salsa from a jar and heat in the microwave. Serve over rice, instant rice would be the easiest. This is particularly good with black beans or kidney beans..

Beans and rice give you all of the essential amino acids, making it a perfect pair for complete proteins. Quinoa is a seed that's also very nutritious and high protein.

Now that it's getting cold, you could make veg chili. A lot of beans and a lot of chili powder, diced tomatoes, plus any other vegetables. Corn, carrots, and celery are good add-ins.

Make black bean burgers.

Buy some vital wheat gluten and make homemade seitan.

Tofu is cheap, too (and extremely versatile). Try firm or extra firm tofu in stir-frys; add silken tofu to fruit smoothies.

I dont know where you live but a lot of grocery stores sell a lot of great options in fake meat.. which is easy because your family can make the same meal (like kabobs... or chicken a vegetable and a carb... and you can just make a fake chicken fillet or use fake beef tips..) Theres also fake sausage and bacon for breakfast.. veggie burgers..fake meatballs.. fake chicken nuggets.. all good sources of protein and iron and low in calories

some brands to look at are gardein, boca and morningstar..

there are normally 2 sections in my grocery stores one in the frozen section near the health food mostly is where a lot of the options are.. and also by the vegetables and silk milk sometimes

good luck!

Salads are the best way to go. you can add onions, baby spinach, cheeses and other veggies to it to make it delicious. i would also suggest eating beans like chick pea salad, maybe stew without the meat, tofu, and soups such as french onion soup. these things are healthy and delicious and very easy to make. after eating this for a little while u will forget about meat =). but remember to eat foods high in protein such as beans (for energy). otherwise try new things such as different types of sandwiches! GOOD LUCK =)

You could always opt for a salad or maybe tofu, which might sound disgusting at first, but it's good with the right sauce. If your vegan, you choices at much more limited, but you can still have some things. The only thing I know for sure is that jello and marshmallows are made from animals bone marrow, so you might want to stay away from those.

I know sometimes it can feel really limiting! I try and go for salads with lettuce, cucumber, tomatoes, onion, olives and peppers and then throw in some type of cheese and maybe some walnuts or pecans. Other than that I would say falafel or houmous salad pittas, soups and veggie stirfries with cashews and noodles. Thats the type of stuff I tend to eat anyway. Hope this helps :)

Vegetable soup is really easy and very cheap. Tomato juice and whatever canned vegetables you like. I typically just add potatoes, diced canned tomatoes, carrots, corn, green beans and peas.
