I'm vegetarian for two years
I'm pretty impressed at Christian Bale (most notable for the recent Batman films) who went from being anorexic when playing his part in The Machinist, to his buff character in Batman in if i recall correctly only 2-3 months on a vegetarian diet.
Naturally protein shakes etc would be used, still f*cking impressive regardless of his diet
It's a difficult choice, but if I had to choose just one, it would be Sir Paul McCartney.
Close seconds to Tina Turner, Amitabh Bachchan, Daryl Hannah, Jamie Lee Curtis, Chrissie Hind, Lynda Stoner, Woody Harrelson and Weird Al Yankovic.

but quite a few listed are only rumoured to be vegetarian - I can't even be 100% sure of those on my own list. You'd have to know those people personally to know for sure. Either way, they're people I admire for their talents in other areas, regardless of what they eat or don't eat.
My favorite Vegan is Betty White! I looove her! I also love Alanis Morissette! (Also Vegan)
But if we're just talking Vegetarian, then I'd say Kate Winslet and Ringo Starr. :)
