How to gain weight as a vegetarian?!
I have a very fast metabolism too arggghh!

Hi. Nuts, seeds and avocados are all calorific but also loaded with nutrients, so as well as gaining weight you'll be getting extra healthy. They can be mixed into virtually any meal and don't add much volume so you won't feel like you're overeating.

Write down everything you eat on a normal day. Look at the list and determine how many calories you're consuming. Then write down how much physical activity and exercise you get and figure out how many calories you're burning. So if you eat 1,300 on a "normal" day, but burn about 500 with physical activity per day, then your net calories for the day are 800. You definitely need more calories if you're trying to gain weight. But that doesn't mean you should eat junk food to get there.
Gaining weight, just like losing weight, should only happen 2 lbs a week max. Otherwise you'll probably be gaining in an unhealthy way. You didn't mention how tall you were, so the math isn't exact, but I entered in 65 inches for your height in this calculator. I guessed "moderately active" for physical activity level, and 18 for age.

It says you should be eating about 2,700 calories a day to gain 1 lb a week. Or 3,251 a day for 2 lbs per week. Try eating more pasta and bread. You're vegetarian, not vegan, so butter is an easy source of fat. Olive oil, avocados, and nuts are also healthy sources of fat (and lots of calories).

I'm a 200 pound male vegan. I suggest making sure you eat three good meals a day, and carry some simple snacks with you for between meals. Make sure you have some sources of healthy fat in your diet. Fat has more than twice the amount of calories per gram as the same amount of carbohydrates or protein. So snacks that include nuts, for example, would be good choices. Take a look at online calorie calculators that tell you approximately how many calories you'd need to eat to maintain a certain weight, given your level of activity, age, height, and gender. This can give you a general guideline for approximately how much food you should be eating. Stay with healthy food choices and stay away from junk foods wherever possible. There are more than enough calories in nutritious food to meet your needs.
For added fat, I mentioned nuts. You could also add avocado, seeds, add a little oil dressing to your salad. Even coconut milk might be a good choice for you. Look for smoothie recipes that are nutritious but high in calories if you don't have time in the mornings to grab a breakfast. You can take the drink out the door with you and get those calories in.
Lots of carbs. Pasta, bread, etc. and lots of starches, like potatoes and yams. If you aren't vegan then eggs and cheese are a good addition to the menu. Also, lots of protein...meaning beans and other similar foods.

If you are serious about this, you should look at vegetarian recipes. There are a lot of very filling recipes that will help you to maintain your weight so you don't loose more. If you're not a cook, then you probably should learn how to cook real fast. Most places are not vegetarian friendly as far as restaurants go, and the ones that are, are usually very pricey. Take the biggest fattest piece of beef you can find, put in on the grill for about 15 mins and then eat it.
Go on the Italiano diet... Eat nothing but pizza and pasta. You'll gain weight in no time.
