Christmas with vegetarians?!


Question: Christmas with vegetarians?
Well me and my boyfriend are going to celebrate christmas with one of his friends and his friend's son. Since it is just us going the total party would be of 4. I volunteered to bring all the food, but I dont know what to cook!? Can you give me ideas? also I'd like an easy desert! Thank you!

There are two main types of Vegetarians: Vegetarian (eats eggs, cheese, but no meat, fish or poultry) and Vegan. (won't eat anything related, or produced by farm animals) If they're a Vegan, I'd just give up... it's too hard for a non-Vegetarian to plan a Vegan meal within a week. If they're a normal Vegetarian, you can do any sort of cheese, egg type dish. (i.e. Mac and Cheese, a nice cheese with bread, deviled eggs, etc) Just make sure you don't throw any bacon (meat) into the Mac and Cheese. lol. If you really want to go out of your way, you can buy a Tofurkey (relatively easy to cook up) in a single portion size at a Whole Foods. (or similar high end grocery store, or even a local Food Co-Op)



K be careful of the answer above mine as while sometimes that is a commonplace guide to what people call themselves, the true definition is incorrect.
If they are vegetarian, they don't eat animals, simple as that. Some subdivisions associated with vegetarians are ovo-lacto (eat milk and egg products) or a breakdown of the two, or (its gonna pain me to say this) pescitarian (eats fish or seafood). However, do not mistake a pescitarian with a vegetarian, they are by definition two completely different things and if you cook fish for a vegetarian it will be a waste of your time. There is also what is called a strict vegetarian, which in basic form is one who eats a vegan diet but doesn't follow all the lifestyle choices of a "true" vegan. By definition, a vegan diet is that there is no eating of animal products AT ALL nor anything that an animal was used to create.
Then there is a true vegan, however it is probably not the case because you would have gotten specific instructions on all the things you might think they would eat but wont.
I hope that clears up this: you need to find out what specifically they are so that you can better prepare and research what you can and can not fix. It may be better to ask them for advice on suggestions as no one will know what they can eat better than they do.

Chris, if they are actual vegetarians they won't eat either the fish or the turkey. That is not a true vegetarian diet, that is just one without red meat. Fish is meat also. So, OP, if they are actual veggies, make sure to find out what kind--and do they eat dairy--some do, some don't, and if they are, they probably won't eat the turkey or the fish.

that said, there are lots of things you can make! Tons of yummy pasta dishes that will make everyone happy. Another easy alternative is something like a dish you can "add" meat to for the meat-eaters (if you and your bf eat meat). You can cook chicken alfredo or something and add chicken to only yours and his, and leave it out of theirs. You can be creative. Lots of things you can do!



I would find out what kind they are

Go with a great veggie lasagna, there are a million recipes on the web. I just made a butternut squash lasagna the other day that was to die for. Add a nice salad and some good bread and you're all set. If you want more you can always add a starter soup.
This is my personal go to favorite dessert. I have never made it without people begging for the recipe and it's so simple:
Apple Walnut Torte with Caramel Rum Sauce
Serves 12

TORTE
2 cup unbleached all-purpose flour
2 tsp. baking soda
2 tsp. ground cinnamon
1 tsp. salt
2 cup sugar
1 stick butter, room temp.
2 egg, beaten to blend
3 cups chopped, peeled apples (about 3 good size apples)
1 cup chopped walnuts

For Torte: Pre-heat oven to 350F. Butter a large cake pan at least 2” high. Sift first 4 ingredients
into a large bowl. Beat butter and sugar until well blended. Add egg one at a time and beat well. Stir
in dry ingredients, then apples and nuts.
Transfer batter to prepared pan. Bake until tester comes out clean, about 45 minutes. Transfer to rack and cool.
(Can be made 1 day ahead. Cover cooled cake and let stand at room temp.)


SAUCE
1 cup whipping cream
2 stick butter
1 cup packed dark brown sugar
6 Tbls. dark rum

Vanilla Ice Cream

For Sauce: Combine first 4 ingredients in a heavy medium saucepan over medium heat. Stir until butter melts and sugar dissolves. Increase heat and boil until slightly thickened, whisking occasionally, about 3 minutes. Mix in Rum and cool slightly.
Serve over torte and ice cream.
