Not necessarily. You can make them out of whatever you want to. Sausage is a very generic word. Purists would say you can only make them out of pork ... yet there are sausages made out of chicken, lamb, beef, kangaroo, blood, cheese, grains, soy, whatever ... and they're still legitimately called sausages. As long as it's vaguely phallic, it can be called a sausage.

EDIT: What are they made of? Could be soy, nuts, peanuts, TVP, wheat gluten, or a combination of those. There are even quorn ones.
