Oil, flour and water is all you need.

Heat abut 2 table spoons of oil.
Mix about a tablespoon of flour with a cup of water.
Slowly add the flour and water while stirring the oil.

You can use vegetable stock instead of water. You can made gravy instead of de-glazing the pan.

Heat oil/margarine. If you want mushrooms, onions, garlic, or whatever in your gravy, add it and saute until soft. Add flour and stir until smooth. (You might need a bit more fat first.) Add a rich vegetable stock and stir until smooth. Let bubble gently until desired consistency is reached. You might need more stock. You might need more roux. Season as desired. I like a bit of Marmite.

Can't you use vegetable stock that's been reduced then thickened with cornstarch? All that's vegan.......

Aren't there commercial vegetable stocks that you can purchase at the health food store??

Who in the heck puts soy sauce in gravy??? I would never do that.

Here is my recipe
Wavey Gravy (just kidding it’s the normal kind)
1/3+ 1TBSP of Earth Balance or similar
1 TSP of thyme
1 TSP of minced garlic
1 1/2 TBSP of AP Flour
2 cups of vegetable broth
pinch of salt
fresh ground pepper
optional: 1 TSP of nutritional yeast

Heat a pan on medium heat. Add earth balance, thyme and garlic. Let it melt and cook a little bit (don’t burn the garlic though). Add flour and stir till flour is cooked or you can let it brown up a bit (but keep the heat fairly low so you don't burn it). Then add warm vegetable broth to the flour mixture s-l-o-w-l-y while stirring (to prevent lumps) Add salt and pepper. Let mixture thicken while stirring occasionally about 5+ minutes.

Or what you could do is take diced veggies saute them in oil add some seasonings and vegetable stock or bullion and some wine or other liquor and slowly over a medium low heat stirring occasionally let it cook down and down until it gets too your desired thickness. It can take a while but can come out really well. I have done this with apple cider/juice and brandy and then towards the end added some soy creamer or mimicreme and it comes out amazing. A rich silky sauce perfect for anything (including car tires)

Really, all those thumbs down? I am the only one who put down a proper recipe that doesn't contain soy sauce.
