You could make a delicious lentil veggie soup.
I gave you a list of various recipes, so you could pick something you're comfortable with. =D
Rest assured, none of these will have any dairy or meat.
Lentils (dry) are also very quick to cook - like fifteen to twenty minutes. So make sure you have all of your ingredients ready. They're also really cheap. A bag of lentils at Walmart is $0.67. =D

There are sour cream substitutes that are 100% vegan (casein free). Tofutti is one of them. How long has your friend experienced this lifestyle? I ate meat and cheese substitutes during "transition' To vegan.

cashews, almonds, and avacadoes! There is even vegan Mayonaise! (Nayonaise is a brand). You could ask your local health food store for some ideas, and visit VegWeb.com for recipes! Almonds and cashews! wow!
My cousin and child are lactose intolerant. cousin family food allergies and philosophy/environment reasons help my choice to be vegan for the last 4 yrs or more.

Not to be.... um... I just ... I am vegan because I love vegetables. I actually prefer no processed foods. Ick. We create and bake our own cookies, prefer not to buy the "accidentally" vegan ones in the store. come on. ... no one makes cookies like your mom! : )

Hummus with an assortment of crudites and crackers would be a great choice with this little notice. You could get several flavors of hummus as well, or also bring an assortment of antipasto items if the local grocery has an olive/antipasto bar.
Why not bring a soup in a crock pot? Like a potato ale or something (not potato cheddar obv)
You can make crusty bread croutons to go with it, and yum yum

How about some hummus? You can either make it from scratch if you have a blender or you can pick some up at the store. Trader Joe's has a great selection!
