Is it possible to replace the egg and still have the noodles come okay? Thank you :)

Actually, it says that real ramen IS vegan.

The only part of the recipe that is not Vegan is the egg so you only need to use an egg substitute.

Try adding 2 to 3 Tbsp. of any of the following for each egg: tomato paste, potato starch, arrowroot powder, whole wheat flour, mashed potatoes, mashed sweet potatoes, instant potato flakes, or 1/4 cup tofu puréed with 1 Tbsp. flour.

Not if you use wheat flour. If you use rice noodles it will be OK but it won't taste the same.
