Vegan grocery list and meal ideas?!


Question: Vegan grocery list and meal ideas?
So I’m really excited because I told my mom I wanted to be vegan, and she said that as long as I eat more vegetables and take a supplement if I need one then she doesn’t care. I told her how I’ve gone vegan for about a week before on my own and described how great I felt, and she was shocked I handled it myself without anybody knowing. So tomorrow we’re going to the grocery store and getting some vegetables, and she said she’ll get me a vegan cookbook for Christmas.
I could really use a list of some simple foods to buy (besides fruits and vegetables) and some simple vegan meals. I have a website where I can enter my meal plans and it gives me feedback about which nutrients I’m lacking. I have a few days worth of foods but I’m running out of ideas. Does anyone have a simple vegan grocery list and some basic meals for a teenager?

Answers:

Whole foods. You'll want to get organic fruits and veggies, because non-organic can have beeswax and shellac coating. Amy's Kitchen, Wildwood, Whole soy, Soy/So Delicious and Cliff Bar all make vegan products if you're looking for conveniance foods. For protein: tofu, tempeh, lentils, beans, and nuts are a must. Also, look for the "certified vegan" seal on products. The Vegan Society has a lot of great information as well, and Happy Cow has a list of animal by-products. Good Luck!

Tofus are good
-can steam them/or use for stew/stir-fry
there are soft and also fried tofus.. just in case..


lentils and dhalls
brown rice- u can make fried rice with vegetables- can vary the flavor and also the ingeredients used
whole wheat pastas
soya sauce
sea salts

why not do some simple vegie stir-fry to go with breads or even pastas and rice.

A recipe that I served to a vegetarian friend, and now make for myself.

Penne pasta, or pasta of choice

2 Tsp olive oil
1 14 1/2 oz can petite diced tomatoes, or peel and dice about 1< lb. fresh tomatoes
2 large cloves garlic, minced PLZ do not use the jarred stuff
1/8 to 1/4 tsp red pepper flakes
1 Tbsp chopped fresh Italian parsley, or regular parsley, or even 1 Tbsp dried parsley

put large pot of water on to boil for pasta, salt water and cook to desired tenderness

in 8" skillet, heat oil to medium. stir in garlic to saute - careful, do not brown garlic! - about 30 seconds. remove pan from heat if too hot. add red pepper flakes and stir another 30 seconds. add tomatoes, stir, low heat to a simmer. no need to cover. cook about 15 minutes - color will change to darker red when done. add parsley just before serving. serve over pasta. serve with bread/salad. 2 servings

the ingredients don't have to be exact - you may like more or less garlic/red pepper/parsley. I don't measure it at all anymore. Hope you try it.
