A tasty salad and a smoothie :-)
You can make a great soup with butternut squash, potato and sweet potato, or leek and potato, or tomato and basil.
Or you can make a salad with some sunflower seeds for protein.
Or try a pasta sauce with lots of veggies- as a substitute for meat you can use chopped nuts.
Polenta, curry and rice, jacket potatoes with beans- they all work well.
I'm not vegan but have a lot of vegan friends and I quite like to make chillies with chopped nuts and then put them in baked avocadoes.

er, a stir fry with tofu rather than quorn, thats not vegan (has egg protein in)
