Soy vs Almond Milk for Baking?!


Question: Soy vs Almond Milk for Baking?
I've been slowly moving toward a vegetarian diet and plan to eventually go vegan. One switch I've made is to almond milk (for smoothies for example). When I explore vegetarian/vegan recipes for baked goods like biscuits, they almost always call for soy milk. I can't use soy due to a medical condition and I am wondering if almond milk is suitable for baking or if I should just bypass those types of recipes altogether.

I used vanilla soy milk for baking vegan sugar cookies yesterday. They turned out fluffy and delicious.

Any of those veggie milks should work fine, but some will impart a flavor you might not want. Almond milk is quite strong-flavored.

With non-vegan recipes, I usually substitute water for cow's milk, and it turns out fine. Since veggie milks are kind of expensive and maybe more processed, you could consider saving them for drinking, on cereal, etc., and give water a try for baking.



Almond milk will substitute very well for anything that calls for soy milk.

Just be sure that, in savory foods, the vegan milk you use is not flavored with vanilla -- even "plain" milks sometimes have a little for flavoring.



Almond milk should work just fine for most things. If you're looking for an alternative to both almond and soy, consider using rice milk. Also, coconut milk is really great to use for baking if you're making something sweet.
