Keep in mind folks chips are "french fries" not potato chips in a bag. The likelihood is that the chips are fried in vegetable oil however they are probably also used to fry fish and potentially other animals parts. I would avoid them if possible or talk with them and see if their chips are fried in separate veg oil or with the fish and other parts or in animal fat (which is less likely but wholly possible)

I think it depends what brand and also which "line" of product it is. Sometimes they use peanut oil, but that doesn't mean there are no animal products/byproducts in them or used to make them. Just look at the ingredients list and Google words you don't understand. You'll be surprised.
The chip shop probably use something quite cheap.
I think animals fats are mainly used in baking, not frying.
So it's probably vegetable oil. Bearing in mind chippys use cheap and fatty ones though. It's probably not the best kind - delicious as the chips come out.

Also, even if they use vegetable oil, they could be frying meat in the same oil, if that's something you're concerned about.
I would think either vegetable or peanut oil
They are supposed to tell you what type of oil they used on the ingredients list... if they don't, they are in trouble.
