Snack: one mango
Dinner: 4 Morningstar veggie "chicken" nuggets, two glasses of Vanilla Rice Dream.

And about 9 cups of water.

Answers:

That is literally about 600 calories. You need more food. A LOT more food. You should be eating around 1800 calories just to maintain weight.
In the morning, add oatmeal for cereal and milk.
For lunch, add a grain. A peanut butter sandwich or some rice.
For dinner, add some more calories. Steamed broccoli, a baked potato, or some nuts/seeds.

It seems very low in fat to me. I don't know that you'd get enough calories from this. You could look into eating some nuts and avocados for example.
It's not going to kill you to eat like this for one day but it's not really viable as a long term eating plan.

All of that is healthy. As long as YOU know you feel GOOD, and absolutely good it is healthy and good for you. If you feel tired and weak then you need more calories. But if you're fine like that, then keep on like that.

You definitely need more food. You're basically eating all vegetables and fruits.
Add some grains! Oatmeal, cereal, bread, spaghetti, rice, tortillas, bagels, ect.

brunch:
2 organic green apples, 2 nespressos, liter evian,
bruschetta on half panera french baguette
(extra virgin olive oil, pesto, sundried tomato, cup tomato mix, cup goatcheese crumbles)

No very, Lots of sugar and starch. Minimal protein. This is not healthy by a long shot.

goooddddd
