Although it seems pretty hard to eat gluten-free and stay veggie, it's not so bad once you know how to work around it-- much like how first going veggie for most people is hard. Here's a recipe and a few links that should help:
Chipotle Chickpea Spread
2 tablespoons garlic, minced w/o oil.
15 ounces chickpeas, drained
2 tbsp. lime juice
1/2 tsp cayenne pepper
1 tbsp. chopped red onion
3 tbsp. diced jarred peperoncini
1/4 tsp. chili powder
1/2 tbsp. onion powder
sea salt to taste
With the food processor running, drop in the garlic and peperoncini.
Add the chickpeas and lime juice and begin processing. If this appears to be a bit dry, add some water, a tablespoon at a time, until it thickens to your preference.
Add the remaining ingredients and process until smooth. Adjust salt to taste.
Enjoy in a lettuce wrap or something similar.

1) Tomato basil soup
* 2 pounds tomatoes
* 1 bunch fresh basil, chopped
* 2 cups vegetable broth
* 2 cloves garlic
* 2 tsp olive oil
* 2 tbsp balsamic vinegar
* salt and pepper to taste
Preparation:
Place all ingredients in a food processor or blender and process until almost smooth, or until desired consistency is reached.
Transfer to a large saucepan and simmer over low heat for 10 minutes.
This quick and easy tomato soup is delicious hot or cold. Makes four servings of tomato and basil soup.

2) Gluten Free breakfast quiche with Spinach and Cheese
Prep Time: 5 minutes
Cook Time: 30 minutes
Total Time: 35 minutes
Ingredients:
* 6 eggs
* 1 bunch swiss chard or spinach
* 1 cup shredded cheese
* 3 diced green onions
* 1 clove garlic, crushed
* 1 tablespoon oil
* 1/2 teaspoon salt
* Dash of nutmeg
* Dash of Tabasco sauce
Preparation:
Wash the chard and discard the stems.
Heat 1 tablespoon oil with the crushed garlic.
Chop or tear the swiss chard into small pieces and cook it for about a minute, until wilted.
Beat the eggs in a bowl and add the cheese, salt, diced green onions, Tabasco sauce (if desired) and the wilted chard.
Grease a pie pan or spray with a non-stick baking spray. You can also use muffin tins prepared in the same way.
Pour the mixture into the pan.
Sprinkle with nutmeg.
Bake at 400F for about 30 minutes. If cooking in muffin tins, it may cook faster.
Variations: You may want to add any other vegetables you have handy, such as sweet red pepper or green pepper.
