I am put a link to the Veganism in a Nutshell article which will answer your questions. It's a guide put together by the Vegetarian Resource Group. You might find their site interesting and helpful.

http://www.vrg.org/nutshell/vegan.htm

rice, beans, quinoa, carrots, beets, potatoes, sweet potatoes, hummus, peas, chickpeas, falafel, tofu, spinach, tomatoes, butternut squash, zucchini, rutabaga, turnips, radishes, parsnips, green beans, lettuce, escarole, kale, collard greens, broccoli, cauliflower, almonds, peanuts, peanut butter, cashews, hazelnuts, walnuts, sunflower seeds, celery, onions, leeks, olives, olive oil, tempeh, seitan, etc.

honestly, you can probably find vegan recipes for just about anything you might like to eat. Get yourself a couple of vegan cookbooks, and have fun.

Oh, and you can get soy milk, rice milk, almond milk, hemp milk, oat milk, etc to replace dairy milk. They make vegan ice cream, too, so you can make milkshakes. You can make a breakfast burrito with scrambled tofu. I've heard good things about Daiya brand vegan cheese, but have yet to try it. There are plenty of vegan fake meats out there, plus recipes to make your own. Have fun!

Hey fishlake..
In a list of 50 foods that will provide you with vitamins, proteins, antioxidants..
The first kind of meat (salmon) was number 25.
Before that it was all vegetables.
Spinach and sprouts are very good for you.
Meat is very bad as the high amount of cholestrol in it will just turn in to your cholestrol.
People deny this and make excuses because they enjoy meat and convince themselves they need it to survive. In fact cavemen barely ever had meat but ate over 300 plants, they very rarely caught a beast and ate it..
And if they did they used every part and didn't just torture it like people in abbatoirs do.
You don't need to find other things to get iron you get barely any from meat anyway.
You'll get ten times more out of a bowl of spinach than a piece of steak.
I know so many vegans that are very, very healthy and have been for decades..
fishlake doesn't know what he's talking about.
Meat eating is also the number one cause of global warming.
(people have cured themselves of cancer by having plant based diets)
We've been brainwashed by the government which abbatoirs pay to promote meat as healthy and necessary for our well-being.
It's all lies..

I'm not a sheep..

Just don't eat meat, dairy product ( milk, cheese ... ), eggs, marsh mallow ( unless you find some that are vegan ! ). But their is soy milk , vegan cheese etc... You can also go on PETA's web site, they have vegan recipes that are not only salad !

Make a list of the foods you cannot eat as a vegan
Take that list to the grocery store.
Buy anything that isn't on the list. That's what you can eat.

You can eat anything that comes from plants.
Fruit
Vegetables
Grains
Beans
Seeds
Nuts
Soymilk
Tofu

Good news, breakfast burritos are still in.

It's good that you're aware of the injustice of the food you eat and want to make changes. Eating "better" animal products is a slippery slope, which is why most people who care about animals and researched the issues decide to go vegan. In order to make profit off of dairy and eggs, it's best to breed unnatural varieties of the animals so that they produce more. This is harmful and uncomfortable for the animal. Sometimes they go crazy and attack each other, but instead of improving conditions, they just cut off the chickens' beaks or something similar. You might think "organic" or "small" farms are better, but really all businesses are out to make a profit and if you want to be sure there is no animal abuse involved, you NEED to not eat animals.

They are also held in captivity and prevented from their natural behaviors. When you drink milk, you're literally taking away a cow's right to nurse and raise her babies. and most farm animals today never see daylight or anything. Why even RISK supporting that?

Don't worry about what to eat. I used to live on steak and chicken fingers, pretty much. First, go to vegweb.com. They have every recipe category you can think of and you can try different ones to see what you like. Tofu scrambles are very good scrambled egg substitutes, if you're brave enough to try one. (amy's frozen foods makes a good breakfast burrito too!) Soy yogurt tastes exactly like dairy yogurt, I promise. Soymilk can take some getting used to, but it's much better for your health and conscience. Daiyafoods.com for the greatest shredded cheese ever.

But yeah. Go to vegweb.com. Meet some vegans on forums and such and ask about their favorite foods. Vegans love talking about their favorite foods. Look on Happycow.net to see if you're lucky enough to have a good health food store or vegan restaurant near you.

Good luck! Feel free to message me if you have more questions!

you can also consider being just a vegetarian and slowly eliminate the few animal related items left on the menu. its hard to just jump right into being vegan. saying you cannot eat something, makes the human body want that even more. so it might be easier to become a vegan over time. also boca products are an amazing supplements for vegans and vegetarians. if you become a vegan/vegetarian, i recommend watching your diet and making sure that you are still getting what you need. oh and trust me, salad gets annoying very quickly if you have it daily.
also with boca crumble bits, you can enjoy spaghetti with sauce again, have tacos and things like that.
ive listed some websites that should help you if you want to look at them. they are some things that i enjoy. i hope you enjoy them also. :) and i hope i was of some help to you.
oh also, if you want, you can also consider humanely raised and organic meats, they can be found at your local health store.

and don't just make a list of things you cant eat, you need to remember to have protein. if you don't you can fall ill to the side effects of being a vegan.
the chances of that happening always just depend on how well you are at maintaining your diet and your life style, protein drinks always have been helpful for me. if you feel fatigue you should make sure to get protein in your body straight away, UN-JURY is a protein powder with 20 grams of protein, and Protein H2O has 10 grams. neither of them are that awful to drink once you get use to them. if you don't like them, edamame beans are a great way to get protein also. :)

here are some other things.

DONT DO IT! Vegetarians are weird. GOD Put these animals on our earth for FOOD any animal with the split hoof are alright to eat and most any swimming animal is ok to eat. GOD made these animalsfor this rason. So the idiots who think there saving animals are actually killing them. If we didnt eat some animals, they would keep multiplying and then eventually one would get sick and it would spread and they would all DIE.

Why? It is unnatural. Humans are omnivores, not herbivores. We require some meat. You can always cut down on your meat intake, but don't buy into the fad to be 'meat-free' just because some other people do. It's unhealthy and can have lifelong negative effects on your bodies systems.

Sister in law almost died from being vegan 8 years ago, and is still dealing with the after effects today because of it

Vegan is such an extreme decision. I wouldn't do it if I were you
