Answers:

health benefits: lower risk of bowel cancer, lower cholesterol, less risk of heart disease, less risk of obesity, less risk of high blood pressure

breakfast ideas: cereal, fruit, porridge, omelette, toast, french toast, pancakes, crepes,

I am also a Vegetarian... Longer life, less chance to get hearth disease, lower cancer rates, ability to stay more active, later in life. It seems moderate Vegetarians benefit the most from their diet. (Ovo-Lacto) At least from what the long term German study most often quoted says. I don't think humans were meant to eat much meat... and definitely not every day like most Americans do. Think about what our ancestors would have come across for our first 200,000 years as homo sapien. Mostly nuts, berries, vegetables... maybe some insects, but definitely nothing like a Cow... Bulls are far meaner than humans, especially before we developed spears (an evolutionarily speaking, short blip ago)... Even then, if a tribe shared a meal with what we consider meat once or twice a year, that would be an exceptionally successful year. Fish may have been easier to get, though.

Still, why kill animals when you don't have to... with all we in the 21st century know about nutrition.

When I lived in Switzerland many years back I was amazed at the number of 70+ year old people biking their way up steep mountain paths between villages. Literally tens of kilometers a day. These people lived to ripe old ages with lots of strength to the end. Their diet was primarily heavy salted cheeses and meats.

My point is that it's not so much what you eat but how you take of your body. Lots of rigorous exercise is going to do you a lot more good than what you are eating. Or put another way odds are you will live longer eating meats and cheese and fat and working hard all day long than you will any modern fad diet and sitting in front of the computer all day.
