Cheese-its and Goldfish are mostly wheat flour as they are. You could use whole wheat and add in some salt and you probably wouldn't notice that much of a difference. There are whole grain goldfish for sale, but they still have cheddar in them. If you made some cracker-type snacks, added in some salt or salted them, and died them orange, they would probably be a pretty good imitation of goldfish or cheez-its. Also, in the video link there's someone attempting to do this. I hope this helps.

I'll second Ami on the Eco-Planet "Cheese" Crackers.

There's also this company called Audrey's that specializes in raw food snacks. She makes a Royal Cheez flavor that tastes a lot like cheese crackers--but is completely raw and vegan, just nuts and seasonings.

Goth: Vegan Essentials carries the Eco-Planet crackers and the Audrey's.

You might want to try Organic "Cheese" Crackers by Eco-Planet. They sell them at veganessentials.com and other places.
