Question: Boiling Dandelion leaves and nutrition?
Would excessively boiling dandelion leaves (to get the bitterness out) ruin its nutritional value?

Answers:

Better to eat the flowers full of vitamin c. Dandelion greens are dried and used medicinally so they are not to be eaten like other greens

You can chop a bit into a salad if you like the taste

Book or herbal medicine

I've never eaten them - although I love salad I seriously associate dandelion leaves with bunny food.
