As a non-religious Jew, my dish for the holidays would be anything Chinese (and vegan of course). Yes the old saying is true.
I would probably go with a Chow Foon with vegi non-chicken (the place I order from has vegan chik'n and it is great even my omni dad likes it) and vegetables. However I might also go with Kung Pao Tofu or Vegetable Fried Rice with no egg.

If you are looking for something more christmas-y my guess would be a Tofurky with roasted chestnuts and maybe a cranberry sauce

One note you might want to add a lot more seasoning too the roasts other than that they are great.

For the cranberry sauce take some cranberries, a little bit of brandy or congac (or not, though it will mostly all cook at and add great flavor) veggie broth (or veggie or not-chick'n bullion), poultry seasoning (rosemary, sage, thyme, marjoram and sometimes other stuff), garlic, minced onions and let that all reduce down slowly. Then when it gets nice and thick and you are almost ready to serve add some Earth Balance just to make it richer and salt and pepper to taste. Sorry I cannot give you amounts because I came up with the recipe in my head but if you need help feel free to PM me and I can walk you through it.

Vegan because animals are not property and a chef

There are some many good foods for the holidays, it's not hard at all. All I do is just pick out all the vegetables that are served. I also have the rolls and deserts. Just don't have any meat. Most of the stuffing doesn't have meat in it so I eat that too. Really it's just as good for me as everyone else. If you're usually strict, for your friends and family, maybe you can just cheat a little like if there is butter in the stuffing go ahead and eat it. :) You've got all year to go back to a strict vegetarian diet.

This is my first Christmas being a vegetarian as well. I eat everything that doesn't have meat (or fish). It's pretty easy. Maybe you can look online for vegetarian recipes that you can make for yourself so that you can enjoy too. That's what I;m doing since I have this really cool tofu cook book. Please, don't cheat and eat meat just because it's Christmas! If you start thinking about taking a few bites out of that turkey, chicken, steak, etc, think about the sweet innocent faces of those helpless animals that were slaughtered. It is easy, just don't let anyone talk you into eating it.
Good luck!
Hope I helped!

A great holiday dish is a dinner pie.
Start with a layer of sauteed onions, carrots and bell pepper in a pie crust. Add a layer of prepared stuffing, a layer of chopped seitan or quorn or portobellas, a layer of mashed potatoes, spoon on some gravy, and add the top crust. Bake until crust is nice and brown, and serve with additional gravy.

One of our favorites for the holiday is Buddha's Jewels. Link provided. This year it is Tofurkey we purchased. Ricker's Tofu Roast tastes like turkey and is cheaper than tofurkey. The third link is to a complete Vegetarian menu for a holiday meal. And the last link is to a page that lists a LOT of ideas and has recipes to look thru on the site. And for your peace of mind, ignore the trolls. If you don't feed them they will wander off somewhere else and play with their toes for entertainment. They want any response you give them. It has to do with the inferiority complex that comes with being a troll.

Well I'm not a vegetarian, but you can eat things made from soy beans and tofu. How about a nice salad? Made with salad, soy cheese, milk-free salad dressing, croutons.

I usually just eat things that only consist of tukey or chicken. I do not eat red meat or dairy.

i just eat whatever i like, usualy just a bit more than usual
i think veggie curry or mac and cheese are good bets ;-)
