Question: My White balsamic vinegar has turned a light yellow. Is it bad to eat. It smells ok.?

There is nothing wrong with the Vinegar. It is a chemical reaction to heat and light that turns the vinegar yellow. This is actually an indication that this is a natural and not chemically treated product. People seem to get freaked out by natural processes in food and are often happier with chemically treated phony food that is 90 percent of the food available in supermarkets. The only reason it may sound gross to someone is because they don't understand natural chemical processes. This product is made from a white grape that includes the skin of the grape. When was the last time you saw a grape that was devoid of color. Use the vinegar on cheese, fish, in cocktails, poultry or vegetables, it's even good on icecream.

There is not a lot available on this subject but the basis of this answer comes from one of the top producers of Balsamic Vinegars in Modena, Italy. I asked him the question recently.



Try shaking the bottle. Balsamic vinegar is a suspension and a mixture, the ingredients might have separated, like when the bits of orange sink to the bottom of the orange juice.



Vinegar is cheap. I would just go buy another one. That sounds gross. Hit up the store! :)
