Question: The only vegetable I like is mashed potatoes. Are there any other vegetables I might like?
What are other good vegetables? How do you make other vegetables taste good? I hate cauliflower and avocado.

I've found there are several veggies that can be mashed in to mashed potatoes without anyone really noticing...like brussel sprouts.

My friend who isnt' fond of veggies likes to eat green beans w/ bacon, corn on the cob, and raw carrots. You should try them...



Some people have issues with the texture of vegetables. Sweet potatoes have a similar texture as white potatoes and are far more nutritious.

I love leafy greens (kale, collard, spinach) washed and raw. Beet are also delicious. Braised onions and carrots are delicious.

If texture is an issue, you should look into purchasing a Vita-Mix blender or equivalent. You can cook and then blend any vegetable for rich creamy sauces that will fool the most anti-vegetable person around.



I used to be very picky as well. The key is to try different ways of eating them & with different sauces, every few months/years. Tastes do change. If you're a bland veggie fan (potatoes are), try boiling up a turnip or rutabaga, peeled & diced, in with your potatoes & mash them up together. Or try sweet potatoes - they have a really nice flavor when mashed or roasted (cut them in cubes with the skins on, toss with a little oil, salt & pepper, & spread on a sheet pan in an even layer - bake at 400 degrees for 20-30 til tender & browned on all sides).

My only other suggestion is to try making a pot of soup with carrots, celery & a little diced onion. Simmer those veggies in chicken broth long enough, & they'll taste like the broth.

A lot of vegetarian food has strong flavours and uses ingredients you might not be familiar with so u would get a book on vegetables as a side dish to get some traditional recipes. Try not to over cook veg as this makes it foul, start with peas beans and corn as they are tasty and go well withashed potato, buy one new veg a week and try it 3 diff ways until you get used to trying new things and build up to about 10 veg you will happiliy eat. The healthiest diets are varied in the meantime I would take a spirulina supplement

I always hated cauliflower till a friend made it. They steamed it, whipped it in a food processor adding creamcheese, butter and parmesan cheese and it was delicious.
I like stuffed mushrooms, snap peas, split pea soup, creamed spinach. I love vegetables.



I was just like you when I went vegetarian. I would recommend trying steamed broccoli and carrots. Those are awesome! Also try eggplant. I know it doesn't sound very appetizing, but it is actually VERY good. I chop mine into slices, put them in a pan and cook them in the oven. Then top it with tomato sauce and cheese (if you're not vegan), perfect meal!



I doubt you've tried enough to make that call. The trick is to make recipes that are delicious like broccoli salad, which has raw broccoli, bacon, raisins, sunflower seeds, and a nice dressing.



You might like raw veggies better than cooked ones, or just add a little butter and most any cooked veggie is improved. Or top them off with a good sauce that includes butter and eggs.



I love mash potatoes, brocolli, salad, and corn on the cob. All the rest of those vegetables I hate and do not eat!



Sweet potatoes, vegetarian baked beans, corn on the cob with butter or vegan margarine.



I mash steamed spinich in with mashed potato and it gradually made me learn to like it. Now I can eat it raw and enjoy it.
