I suggest you purchase two books,"Diet for a Small Planet" & "Recipes for a Small Planet"
Those are the books I followed. Great info for getting complete daily essential amino acids.
It is good that you want to change your diet--vegetarian and vegan diets are much better for health, the environment, and obviously the animals. But I'm a little concerned about your motivation. If the only reason why you want to give up meat (except seafood "i guess")and dairy is because of slight tummy aches, then you may not have the determination to keep it up for the long term. People are usually able to be "veggie" for extended periods of time because of their high moral fiber and ethical standards for what they consume.
I would recommend doing more research, besides asking around on Yahoo Answers

There is a ton of nutritional info on how to have a healthy diet without animal products, go to the podcast tab.
I would also recommend eating more whole foods--fruits, veggies, nuts, grains, lentils, beans... things that are good for you and don't require nutrition labels. Speaking of nutrition labels, you can look on those to see whether or not a food item contains dairy. There are so many options I can't list them all here! Vegan diets are truly the most colorful and variable!

Haha Meat will be missed for a while but after a while you forget about it, I'm a vegi and I don't miss it a bit now, I bit into a Beef taco when I ordered a bean and I almost threw up... about a year ago I loved beef.. haha try whole foods. There tons of vegi nuggets and veggi burgers you'll like and milk you can drink. If you want a good veggi burger that tastes like a burger try Boca burgers.. sooo yummy and morning star bacon and nuggets.. haha they the best.. and if your going out to eat, I tried a veggi burger at Back Yard Burger.. Best I've ever tried.. Hope this helps!

make sure you get a variety of nutrients, and protein. I would recommend getting set up on My Fitness Pal, it's a free website where you can log what you eat and it calculates your calories, carbs, fats, protein etc. it's intended mostly for weightloss but it's also useful for nutrition awareness.
You should go vegan also. It should help if you ever want sweats.
