Check out some of the recipes in "Recipes for a Small Planet" There are so many nutritious yummy items that are easy to prepare.
Can you use cheese made from animal milk? Stuffed manicotti shells. For the filling, mix cream cheese and cottage cheese together(I don't like the texture of ricotta, too dry for me). Let those mingle for a bit, and saute some spinach and garlic together(use your own taste for the herbs and spices you'll use). When that cools, mix with the cream/cottage cheese. Use what ever tomato/spaghetti/marinara sauce you like. Stuff the shells, poor on the sauce, and top with your preferred shredded/grated cheese mix, and bake. :D
how bout a vegan Chocolate cake, its' sooooo yum~
1 1/2 cocoa powder
2 cups organic flour
2 1/4 cup organic sugar
2 teaspoons baking soda
1/2 teaspoon baking powder
2 tablespoons ground flax seed
1/2 teaspoon salt
1 1/2 cups boiling water
1/2 cup olive oil ( or your favorite healthy oil)
1 1/2 teaspoons vanilla organic extract
Mix all dry ingredients, boil water add vanilla and olive oil to water mix, pour liquid into dry ingredients while blending until you get a nice smooth batter.
Bake in oven or add to cup cake maker, bake, it's done when you test it with a tooth pick and it comes out clean.
First, i must appreciate you on your interest about veggie recipes. There are a lot of websites out there talking about them in detail but i found http://www.goodtoknow.co.uk/recipes/Vege… very attractive and useful. i am also planning to prepare at least a couple of these recipes for Xmas.
