What are some good recipes for lentil chili?!


Question: What are some good recipes for lentil chili?
I made a simple one last night with lentils and would like other ideas.

Answers:

Chili only requires one thing, peppers. Really I use beans rather then lentils as they tend to have a more "heartier" bite. I like large beans, like white northern, over smaller beans, like black beans. But that is my personal preference.

I do not measure anything, but I have been making chili for the better part of 40 years. It would work with just about any bean. I have used canned beans but mostly I make a pot of beans and put it in the refrigerator. It is one of the basis foods I make to put in other things I make later. And no I am an omnivore.

Take 5 peppers, and rehydrate them ( Buy them in bulk dry). Sort of depends on how hot you want them. It takes about 30 mins.
Try two medium onions, diced, in olive oil (or whatever oil you want), until tender
Take 1 pound of beans, black, kidney, white northern, whatever. Even mix them. Add them to the onions. (make sure they are cooked, canned works I prefer my pre-made ones)
Season with about 4 tbsp chili powder.
Add to that about 1 tbsp cumin (preferably from cracked seeds)
Add to that about 1 tsp of oregano (really I just go trim some from the garden)
Add to that about 1 tsp of salt (you can omit this if you like)
Grind in a nice amount of black pepper (about a tbsp)
Add to that enough liquid to cover them (I prefer my own beer, water works fine, don't neglect the water you hydrated the peppers in)
Since it contains no beef to make tender you can simmer that for about 30 minutes. Really I still do about 2 hours, but that is more ceremonial then cooking.
mix some masa herana (not cornmeal, not cornbread mix, cornflakes work though) and some cold water. Mix that in to make it thick.
