How much effort are you looking to invest? Mushroom wellington is a nice, luxe dish. A bit time-consuming, though. A quick Google will bring up a slew of recipes.

Including the one on this page, which includes a decent Xmas menu:

Root vegetable gratin makes a lovely side dish -- don't skimp on the butter...



Good luck. I can't live without meat, I've tried it for a week and by the end of that week, I was ready to pick up an ax and butcher a cow myself.

Edit: When PETA stops killing animals in the back of vans and dumping the corpses in garbage cans or storing them in freezers while condemning others for killing and eating animals, then I will have more respect for them.
