Question: What's something vegan I can make for breakfast on Christmas?
On Christmas morning, my mom always makes this casserole thing with eggs, cheese, and sausage. I'm vegan, so of course I won't be eating any. What's something yummy, healthy, and vegan that I could make for breakfast so I won't be just sitting there while everyone else eats?

I would probably go with a vegan pancake recipe, tofu scramble, or some kind of crepes. An awesome smoothie would go best, of course.

Here are a few vegan breakfast ideas that are relatively easy and good enough to share with vegans and non-veg alike!
1. Baked oatmeal: Core 1 apple, chop it up, mix in a bowl with 2 cups of whole oats and 3 1/4 cups of soy milk, rice milk or water. Add 1/4 cup brown sugar. If you like, add raisins, walnuts or other dried fruit. Coat a baking pan with cooking spray and put your mixture in the pan. Bake at 400 for about 45 minutes. This makes quite a lot so you might want to cut it in half if it is just for you. The leftovers are AWESOME though -- just put a serving in a bowl and microwave it.
2. Make an apple or pear crisp. A serving makes a wonderful vegan breakfast and everyone will want some. Also makes a great dessert and can be made the night before. (Use vegan margarine instead of butter in this recipe).

3. Easy oatmeal/museli: The night before place 1/2 cup oats, 1/2 cup frozen fruit, 1/2 cup soy or rice milk in a container. Stir. The next morning your breakfast is ready. Add nuts and dried fruit if you like.

Make it memorable... go indian food...dahls, paneers, potatoes, califlowers, peas...so many good recepies on the web...some have dairy or u can make without dairy..remember naan too.
Also lots of ready made stuff at whole foods, trader joes, fresh and easy, and yes Target.. found atleast one vegan entree at each store.
Bottom line, Indian spices are passion.
