Well I do not eat breakfast, for "breakfast" I have coffee and wait it out until Lunch. For lunch I have anything ethnic and very spicy over either jasmine rice or brown rice. Usually the stirfry over it has beans of some kind in it, often blackbeans or mashed lentils. On the side (or for dessert) I will have a raw fruit or two.
For dinner I make anything from pasta to vegan burgers and baked fries. Sometimes the things I have for lunch and dinner are switched around. If I go out to eat, I have a baked potato, peanut butter, steamed vegetables, and a hot tea. I'll put picante sauce on my starch. I like almond milk to drink.

Vegan :)

On school days, I usually have a piece of toast with butter, and scrambled egg with salsa.

My family has cereal usually, or quesadillas (tortilla with cheese and beandip, or salsa). Or something which we call a "breakfast burrito", which is a quesadilla with scrambled egg inside. Really delicious.

Sometimes pancakes, french toast, or waffles!

Don't forget the fruit, too.

i see that this is in the Vegan and Vegetarian section and something that my Puerto Rican family has eaten many times for Breakfast and Dinner is something called Mofongo. After frying chunky sliced plantain, it is smashed in a large pestle (or a bowl im sure will work) along with garlic cloves and Adobo. it's delicious.

Breakfast: cereal with fruit or nutrigrain bar with fruit or unfrosted poptarts or pancakes with eggs or a muffin with fruit.
Dinner: Veggie burgers with rice, Morningstar vegan riblets with sweet potatoes, spaghetti with porta bella mushrooms, BBQ tofu with greens, Plantain turnovers with rice & beans and avocados,
Lightlife vegan imitation chick'n strips with french fries, Quorn "chick'n" cutlets with mashed potatoes and corn.

Vegetarian

Oatmeal, pancakes (without eggs or milk, obviously), or toast with jelly/ jam/ preserves or any nut butter, if it is not a school day.

On school days, I am usually rushing to get out the door. A smoothie is typically my first option, occasionally with a Nature's Valley peanut butter bar.
