What healthy dishes do you eat?!


Question: What healthy dishes do you eat?
I am trying to find ideas of actual healthy meals. I have types of foods written down, but I can't seem to actually come up with any MEALS that are healthy. What are some ideas that you usually have? Im stuck.

Grilled salmon with steamed vegetables



Hmm...one of my favorite things to do is make a portobella burger. You just get one of those portobello mushrooms and cook it in a pan like you would something else with a little olive oil (and garlic if your feeling fancy). Then I just put it on a whole wheat bun with some red bell pepper and feta cheese. It's really quite tasty, but if you don't like mushrooms I wouldn't reccomend it.

Another one of my favorite dishes is this really good pasta. Just cook up some spinach and cherry tomatoes and toss it into some whole grain pasta with a little olive oil and parmasan cheese. I sometimes toss in some vegetarian chicken if I feel like it.

Other favorites:
Greek yogurt parfaits for breakfast with fresh fruit and Kashi Go Lean on top
Egg white omelets with tons of yummy veggies like spinach, red pepper and chopped broccoli
Quick sandwiches for lunch with baby carrots and hummus and a granola bar
Various whole grain pasta dishes with a salad on the side

You might try Eating Well.com. They have TONS of healthy, delicious recipes to pick from. And they have HUNDREDS of vegetarian recipes on there as well. You can search for recipes on the site as well. Say you wanted a healthy sandwich recipe, just search it and it comes up with a TON of recipes.

I love the deer and elk that I harvested this last fall. Take that and add some asparagus that I picked near the creek and some broccoli and salad fixings that I grew in my garden, washed down with beer that I brewed myself with barley and hops that came from a neighbor's garden. Does not get any better!

I'm vegan, and here are some healthy meals that I really like:

Chickpeas with quinoa and spinach
Natural peanut butter on whole-wheat bread with some vegetable soup
A homemade (or store-bought) veggie burger on whole-wheat bread, with some kind of fruit or veggie
Tofu veggie stir-fry
Roasted veggie pizza


There are lots more, but these are just the ones I could think of right now.
