It's made from soybeans. They make 'soybean milk' from soybeans by cooking them and grinding them. Then the milk is curdled by adding calcium chloride or magnesium chloride. Then the curds are pressed through cheesecloth, and then you have tofu. It's a lot like making cheese, except with soybean milk instead of cow milk.

One is aseptic which is packed in an airtight box which doesn't need refrigerated. The other is called cotton or waterpacked. It needs refrigerated. aseptic is good for desserts and cotton is good for a meatier recipes.
