Which vegetables need to be heated to release their vitamins and other goodies...?!
Thank you.
Answers:
Really none.
There's a misconception that tomatoes need to be heated to release the lycopene, this isn't true( you don't need to cook them). And the concept that cooked tomatoes, and tomato puree has more nutrients than raw is only becuase tomato puree has had all the liquid boiled out of it.
Nature is a perfect organism- our bodies heat food enough to release the vitamins and minerals and oils in them- nature does not make a "dried" plum or seed that can only be sourced by heating it.
