I am not a vegetarian but macaroni and cheese is good and so are the vegetable steamers you put in the microwave. You have a pretty avatar.



Make sure you eat a good breakfast to stave off hunger in the morning. Here's a days suggestion:
Breakfast: 1/2 cup dry McCain's Quick Oatmeal
1 Tablespoon Dried Cranberries
1 Tablespoon Raisins
Your favorite sweetener (I like honey, we have bees)
1 cup water
Mix together. Heat in microwave 3 minutes
Add 1/2 cup of milk (almond, soy, cow, whatever you choose)

Mid Morning Snack: A piece of fruit (mango, apple, banana etc. . .)

Lunch: 1 Morningstar Chix'n Pattie
1 slice of Mozzerella cheese
1 Tablespoon Marinara sauce
1 Burger roll
Heat pattie in oven or micro as directed on package. Add cheese to melt. Put on roll
and top with marinara sauce.

Mid Day Snack: You choose: 1/4 cup nuts or peanut butter stuffed celery sticks, string cheese, carrot sticks . . .

Dinner: Jamaican Rice and Beans

The chile is cooked whole with the rice and is there just for a bit of flavor. It doesn't make the rice hot at all, as it stays whole and you discard it at the end.

? 1 Tbsp vegetable oil
? 1/4 yellow onion, chopped
? 2 garlic cloves, chopped
? 1 cups long-grain rice
? 1/2 teaspoon salt
? 1/2 teaspoon grated fresh ginger
? 1/2 cup water
? 1/2 cup vegetable stock
? 1 cups coconut milk
? 1/2 15-ounce can black beans (or your favorite bean) rinsed and drained
? 1 teaspoons dried thyme
? 1 whole Scotch bonnet chile (can substitute a whole habanero)
? Lime (optional)
Method
1 Heat the oil in a medium pot over medium-high heat. Add the onions and sauté for 4-5 minutes, until they begin to brown on the edges.
2 Add the garlic and rice, stir well and cook for another 2-3 minutes, stirring often.
3 Add the grated ginger, salt, water, stock and coconut milk and stir well. Add the kidney beans and sprinkle the thyme over everything. Add the whole Scotch bonnet chile (or habanero); it will season the rice much like a bay leaf would. Bring to a simmer, then turn the heat to low and cover.
4 The rice should be done in about 15-20 minutes, depending on the type of rice you are using (some long grained rice takes longer to cook). Check after 15 minutes. Once done, remove from heat and cover for 10 minutes. To serve, fluff with a fork. Sprinkle with a little lime juice if you want. Discard the habanero (or eat it, if you dare!)
Serves 4.



Try googling and buy yourself a couple of good books. Some tasty vegan/veggie foods I enjoy are: peanut butter and other nut butters (try cashew and almond nut butters they are healthier and SO tasty), toasted seeds with soy sauce (you can buy them that way or make them yourself), mixed veg tofu stirfries and many of the replacement meat products that are available. For snacks, if you can get Nakd bars in your country they are totally gorgeous, raw cocoa with dates and they taste really chocolatey and rich.

If you can't think of anything to eat just read some books and do some googling. There's plenty you can eat you just need to learn to think and book in a new way.



Good for you! I have been vegetarian for 17 years and it's true that we do need to eat more often. Like animals who don't eat meat, who graze all day long.

I recommend nuts and seeds, green vegetables. They do a great deal of good for vegetarians. And it pays to be savvy about what foods you need to stay healthy with. And some feel that a healthy veggie or vegan is healthier than a meat-eater.
I eat quite a lot of potatoes to bulk me up.

I think that it's a good idea to invest in a good cookery book. Whenever I cook for meat eaters, they tell me that with food this good, they wouldn't eat meat and wouldn't miss it.

I love vegetable juice. I have a juicer.
And it seems to do so much for me as soon as I've had some.

I love halloumi cheese as a treat.

Raw vegetables are great too. And salads!

A nutritionist friend of mine said that lots of people who first become vegetarian consume a lot of cheese. That's not optimal but it's a reasonable phase.

Also, I'd recommend taking yourself to a veggie restaurant. I learn a lot about different styles of vegetarian cooking and get ideas when I go.

my favorites are juicy mangoes or melons & sweet berries & crispy apples! um, raw crunchy vegetables, peanut butter, spaghetti... if you're craving meat, i'm sure you know there's a ton of soy based products in grocery stores. have fun experimenting & discovering new delicious foods!

You need protein to feel "full", with meat substitutes you can do that. Think about these alternatives that you can always have at hand: almonds, protein bars, cashews, or peanuts.

I'm not a vegetarian (although I'm working on it! Baby steps) but I just want to say thank you for doing this. You are saving many animals from being treated like poo.

And I love fruit salads, spinach omelletes, and cheese+tomato pizzas!



soy burger from morning star. add lettuce, tomato, ketchup, and your favorite bread. mm so good! also asian foods!! mochi, miso soup,etc



I love Quorn "chickenless" chicken nuggets, cream of wheat, carrots, bananas, kiwi, potatoes.



Quorn Chicken Style Pieces... there really nice.
Pizza (you know what normal people like)
Linda McCartney also does loads of vegetarian options..



A lot of fruits and vegetables can help you meets your desire to be a vegetarian.
