Yes, you'll be fine. In fact you could probably eat them a week past the expiry date and still be fine - the texture and taste of the cookie would just be different (ie: stale) which would put you off eating it in the first place!
For foods like this, expiration dates are put on food to indicate that the food may lose freshness and optimum taste. As long as the cookies have been stored in a "cool, dark" place or whatever the package recommends, you should be okay.
