Can you freeze coconut milk in the carton?!
I know you're not supposed to with almond milk (according to the almond breeze website), but what about freezing coconut milk like the So Delicious brand? I have done some google searches, but they mostly refer to coconut milk from a can. I don't want to freeze it in ice cube trays. I want to just freeze the whole carton, and then put it in the fridge to defrost, so I can use it half a cup at a time in a recipe.

No, the carton will burst, and anyway once you're defrosted it once, you couldn't refreeze it.
Buy some inexpensive plastic containers, pour a half cup of coconut milk in each, freeze them, and defrost them one at a time as needed. Or just buy a new carton of coconut milk when you need it for a recipe, and drink the rest (they sell quart-sized containers in the extended shelf life milk sections, in addition to the half-gallon containers in the refrigerated section).
