What are some good low-cost vegetarian meals? I'm 13/12?!
Answers:
I make a tofu stir fry. I buy the extra firm tofu, and I cut it lengthwise and width wise, so I get pieces about 1 inch square.
I then put in various vegetables, such as carrots, onions, mushrooms, zucchini, squash, and anything else I can find. Sometimes I put in a bag of stir fry vegetables that I get at Trader Joe's. Sometimes I put in frozen rippled potatoes. I then add spices. Anything you like. I do not add any sauces since I try to keep salt content down.

The vegan salad recipes makes a good dinner (there are many variations to prevent boredom). You can have fruits for breakfast and snacks. For lunch you can either have a fruit smoothie or green smoothie or sandwich. Good luck!

spicy lentil soup

soak dried lentils in water without salt overnight. if you can soak in vegetable broth without salt overnight even better
fry onion and garlic in oil, add to lentils and water, with spices like oregano, basil, chopped tomatoes. cook over medium heat until really thick. enjoy
I'll second the spicy lentil soup. It's great and really easy to make. I like to eat it with sauteed mushrooms, maybe add some coconut milk to make the broth thicker. That's pretty common in stores these days.
We are heading into the summer time so any salad meals are good, but in the winter why not just go for vegetable stews or pasta bake.
