Raw vegan food dehydrator question?!

Question: Raw vegan food dehydrator question?
If I remember correctly, raw vegans can have dehydrated foods that aren't "cooked" past 120F. My food dehydrator I just purchased recommends that the setting be set at 135F for 10 hours (apples and bananas).

What is your personal experience with dehydrating foods? Any advice is greatly appreciated for this is all new to me!

Answers:

Just set it at 110-120 and run it longer. Dehydrating is a trial and error sort of process.
