Veggies are a good thing, their delicious and amazing for your body so good for you for working on adding them. Your food intake today sounded fine, i'd add a spinach and carrot salad with lunch, and some roasted vegetables with dinner. Maybe some cut up carrots and celery with snack?
Vegetarian foods that i eat mostly:
beans, pinto are my fave
lentils
nuts-- almonds and pistachios=mm
nut butters like almond butters
fruits and vegetables
seeds
whole grains
tofu
tempeh
setan
check out your local natural foods store or Whole Foods. Stores like that, they often have good vegetarian picks and pre made stuff.

Vegetarian (i don't eat eggs, gelatin or dairy, but i do eat honey.)
:D
My typical (not incredibly healthy, mind you) diet consists of something like this:
Breakfast:
2 Morning Star Chik Patties
Lunch:
Three tacos with Boca veggie taco meat
Pretzel sticks
Dinner:
My dinner usually just consists of a big string of snacks, which can include just about any combination of white rice, fruits and vegetables (mandarin oranges, pineapple, apple slices, and carrots are my favorites), Morning Star/Boca "meat" products (chicken patties, burger patties, and taco meat mostly), and frozen waffles and cereal when I happen to have them. It's mostly just a whatever happens to be in the kitchen sort of thing, unless I get fast food (a bad habit of mine).
You don't have to stick to 'rabbit food' to be a vegetarian! Definitely try out Morning Star and Boca products.
