Apart from tomatoes you can add diced cooked potato, spring onion peppers sweetcorn (being a vegetarian ,not sure about cheese) mushrooms peas . The list could be endless if you use your imagination. You can put any veg into an omlette as long as it it either grated or chopped very finely.
Hope this will give you some ideas.
Get cooking.

Mushrooms are the best thing for an omlette, I also add stuff like fresh basil, onion and sometimes chopped veggie sausage, chilli and cheese

Maybe some sauce. I don't eat omlettes but I would probably add shiro miso paste. I eat this with everything :D
