What are some really good vegetarian recipies? ?!

My sister is vegetarian and we make vegetarian lasagna. Just typical lasagna and then we put zucchini and broccoli in it. Also we make potato tacos. Make mashed potatoes then get some flour or corn tortillas. Spread a little mashed potato on the tortilla and some cheese then fold then fry both sides in oil. Then after it comes out add lettuce and tomato or anything you'd like. You could also swap the potatoes for refried beans. Both ways are really good. I know we make a ton of veggie dishes but those are all I can think of right now.
