Easy quick oatmeal bars without too much ingredients?!
Answers:
I found a recipe for Baked Oatmeal Snacks that uses the ingredients you listed and is baking soda/baking powder-free. It calls for chopped walnuts, but you can omit those if you don't have them - but I do think the bars will taste better if you add them. For dried fruit, if you don't have the cranberry trail mix, just add more raisins, but don't overdo it.
Ingredients
* 1.5 cups rolled oats
* 1/2 cup chopped walnuts
* 3/4 cup dried fruit (I used 1/4 cup cranberry trail mix, 1/4 cup raisins, 1/4 cup chopped dried "just banana" from TJ’s)
* 1 tsp cinnamon
* 1 tsp kosher salt
* 1.25 cups skim milk (soy "milk" can work in its place)
* 1 egg or egg substitute
* 1 tsp vanilla (You don't HAVE to)
Method
1. Preheat oven to 350*
2. Mix dry ingredients.
3. Mix wet ingredients.
4. Pour wet into dry. Stir to combine.
5. Pour into a 9×9 baking dish either coated in cooking spray or lined with parchment.
6. Bake for 40 minutes.
7. Cut into 9 squares.
Makes 9 servings.

The word you're looking for is "unleavened." Many people do not believe in using leavening agents. (It can be against their religion, even.) I LOVE the recipe just given, and just wanted ask you, do you have bananas? It calls for butter or margarine, brown sugar (if you don't have brown sugar, you can use a TINY bit of molasses to white sugar), an egg, bananas, salt, oats, raisins and walnuts (both of those could be left out if you don't have them, but they'd add to the flavor).
I'm including the link for the recipe. But honestly, I'd go for those snacks for now, and make the bars when you have the rest of the ingredients!
